Barone Ritter de Záhony, Edda Cristina - Pálava

Vine variety: Pálava 100%.  Pálava is a protected landscape area and a UNESCO biosphere reserve located in Moravia on the border with Austria.

Tasting notes: from a grape variety which has its origin in Moravia and Hungary, in honor of family traditions and ancient Hungarian possessions.

Crystalline yellow in color, it is a beautifully aromatic and full-bodied wine. Slightly spicy, has an intense bouquet of lime, apricot and peach with classic aromas of white field flowers such as acacia, honeysuckle and rose.

Its taste is clean and persistent with excellent minerality that supports the great aromatic complexity.

 

Pairings: Matches perfectly with fish recipes, white meat and spicy food.

Vinification: grapes are destemmed, delicately crushed and gently pressed. The resulting must is transferred into controlled temperature fermentation tanks for 8 months with frequent bâtonnages.

Tasting notes: ruby red in color. The bouquet presents typical aromatic notes of red berries, like raspberries, with hints of violet and spices, like black pepper. In the taste it is full, complex and fulfilling, with a good balance between the primary and the tertiary aromas.

 

Pairings:  ideal for being served together with middle-aged cheeses and game dishes.

Vinification: parings are kept in touch with the must for at least one week, with daily pumping over of the dregs, and délestage at monitored temperature. At the end of the fermentation the wine is refined in barrique-barrels for 12 months. After the bottling it is refined again for several months in the bottle.

 

Bottle ageing: great aging potential for more then 10 years.

HEKTOR MERLOT BOTTIGLIA

Tasting notes: ruby red in color. The bouquet presents aromatic notes of currant and blackberries, in balance with the hints of spices and vanilla.  At the palate it expresses itself with great complexity, which goes perfectly with the tertiary aromas of spices.

 

Pairings:  ideal for being served together with aged cheeses and great red meat dishes.

Vinification: parings are kept in touch with the must for at least one week, with daily pumping over of the dregs, and délestage at monitored temperature. At the end of the fermentation the wine is refined in barrique-barrels for 36 months. After the bottling it is refined for another 12 months in the bottle.

 

Bottle ageing: great aging potential for at least another 10 years.

Tasting notes: Intense ruby ​​red in color. The bouquet expresses notes of undergrowth, such as red fruits or moss. On the palate, there is a fine sensorial balance between primary aromas of red fruits in combination with tertiary ones, where pepper dominates in harmony with vanilla.

 

Pairings:  ideal for being served together with aged cheeses and great red meat dishes, but also white-meat dishes with some intense sauce, as well as truffle dishes.

Vinification: parings are kept in touch with the must for at least one week, with daily pumping over of the dregs, and délestage at monitored temperature. At the end of the fermentation the wine is refined in barrique-barrels for at least 36 months. After the bottling it is refined for another 12 months in the bottle.

 

Bottle ageing: great aging potential for at least another 10 years.

Tasting notes: brilliant straw yellow in color. The nose reveals floral aromas of white peach, golden apple, bread crust and vanilla in the final part. Its taste is pulpy and soft, elegant and balanced. The passage in barrique makes it rich in taste with excellent persistence.

Pairings: fish recipes and white meat, particularly with sauce as well as shellfish and creamed vegetable soups

Vinification: grapes are destemmed, delicately crushed and gently pressed.  Part of the resulting must is transferred into French Barriques and part in temperature-controlled fermentation tanks for 10 months with frequent bâtonages.

Tasting notes: brilliant straw yellow in color, the nose offers a wide range of aromas, especially floral ones of aromatic herbs, but also fruity, with notes of apple and peach, rather than pear. On the palate it is lively and fragrant, with a good balance between its characteristic acidity and the mineral notes it leaves in the aftertaste.

 

Pairings: ideal as an aperitif or with antipasti, both hot and cold. Particularly suitable to accompany fish-based dishes and young cheeses.

Vinification: grapes are destemmed, delicately crushed and gently pressed. The resulting must is transferred into controlled temperature fermentation tanks for 8 months with frequent bâtonnages.

Tasting notes: garnet red in color. The bouquet presents mainly aromatic notes of the marasca cherry and of underwood berries. Its taste is of a good structure and complexity, with a predominance of red berrys and currants. It is soft and complaisant, with elegant and thirsty tannins.

Pairings: particularly suitable with cheese, red meat and game.

Vinification: parings are kept in touch with the must for at least two weeks with daily pumping over of the dregs, and délestage at monitored temperature. At the end of the fermentation one part of the wine is being refined in new barriques for one year, while the other part goes into steel tanks. Later they are going to be merged for a further ageing in the bottle.

Tasting notes: Peach pink in color, with a gentle floral bouquet, characterized by peach and apricot. Fresh in taste with lively notes of citrus fruits.

 

Pairings: perfect with hot and cold appetizers. Especially suitable with delicate fish and white meat receipts.

Barone Ritter de Záhony - Brut Prosecco 

Bottle Prosecco DOC Brut

Format: 0.75 L /1.5 L          

Alcohol: 11% vol  

                            

Vine Variety: Glera 100%   

Classification: Prosecco DOC

 

Tasting notes: soft yellow color with subtle perlage, creamy and persistent. An intense bouquet with notes of yellow pear together with strikingly fresh spicy hints such as grapefruit and Granny Smith. Refreshing and restrained acidity, the body is light and lean with  great richness that makes the product smooth to drink. 

Pairings: Suited for every occasion, whether a sophisticated and lively aperitivo or to accompany fish dishes, fresh cheese and white meat. Ideal for any type of context, never a predictable taste and always well proportioned, this prosecco is fresh, harmonious and rich.

Vinification: softly air pressed with floral fermenting. The first fermentation takes place in steel with a set temperature and subsequently a refinement process takes place on noble deposits for 2-3 months. 

Froth: Charmat method with select yeasts at a set temperature (13°/14°) with a second, particularly long fermentation (90 days) in order to obtain refined and constant perlage.

Barone Ritter de Záhony, Nyar- Pálava

Bottle Nyar Palava

Format: 0.5 L

Alcohol: 14% vol

Vine variety: 100% Pálava.  Originally from the UNESCO heritage region of the same name located in Moravia (Czech Republic) on the border with Austria.

 

Classification: IGT Venezia Giulia

 

Vintage: hand picked in wooden boxes

 

Parcel: Il Bosco

 

Yield: 8 tn/hectare

 

Vinification: the selected bunches are left to dry for about 90 days, during which time it loses more than 50% of its original weight and naturally concentrates the sugars and aromatic components. The pressing takes place manually in the press, followed by a 24-hour maceration. The start of fermentation takes place in new barrique, where it remains for at least 2 years. It is then bottled without filtration or clarification. Then follows a further maturation in the bottle for 6 months.

 

Tasting notes: Brilliant amber yellow in color with a great intensity to the nose. It has notes of ripe fruit, spices and honey. On the palate the wine is of great finesse and intensity with an excellent balance between sweetness and acidity, it stands out for its final salinity which supports the great aromatic complexity.

 

Pairings: excellent dessert wine, but particularly suitable to accompany dishes with intense aromas, such as fois gras or blue cheeses. Also recommended as a meditation wine.

Bottle ageing: great potential for further ageing.
